In 1668, the young monk Pierre Pérignon took office as the cellarer and procurator of the Benedictine abbey of Hautvillers on the northern slopes of the Marne, in the heart of Champagne.
For the 47 years under his watch, the abbey and its vineyards prospered.

THE MISSION OF DOM PIERRE PÉRIGNON
On 29 September 1694, Dom Pierre Pérignon wrote that his mission was to create “the best wine in the world”. He dedicated himself to improving viticulture techniques, perfecting the art of blending grapes from different crus, and introduced the gentle and fractional pressing to obtain white wine from black grapes.

Considered by many as the “Father of Champagne”, until his death in 1715, Dom Pierre Pérignon made no exception in his quest for perfection. His enhanced techniques have been passed down to create a wine whose reputation remains second to none. Champagne entered a new world.

In 1990 Richard Geoffroy was appointed Chef de Cave of Dom Pérignon, and entered as the guardian of this hallowed temple. His duty, which continues today, is to ensure that the House's commitment to excellence is fully respected.
